Groundhog Stew

Happy Groundhog Day!
One year in a genius moment of parenting, I told the kids we were having Groundhog Stew. 
Unfortunately, I only did it once and the children have no recollection of this brilliant parenting psy op.
Did the groundhog see his shadow this morning?
Is winter almost over?
We aren't having groundhog tonight but I thought I'd share a couple of our recent menu ideas. 


I was watching one of my favorite handbag YouTubers. 
She showed how she made potstickers.  
I went to Albertson's and found some in the frozen food section.
I boiled them until the dumplings look a little translucent and then I browned them in a small amount of cooking oil.


We've had these on salad with sesame dressing and with a beef noodle bowl.
I'll share the noodle bowl recipe once I've worked on it a little.


We love them with steamed edamame.


These rangoon wontons are amazing. All of these would be great Super Bowl food.
We don't watch the Super Bowl but we do like fun food that night.


I'm also working on perfecting the enchilada.


The secret is white corn tortillas and really good cheddar cheese.
We are loving Lucerne Medium Cheddar.
I'm using Old ElPaso Mild Red Enchilada Sauce.


Dredge the tortillas in a little bit of cooking oil, fill with grated cheddar cheese and pour the sauce on the top.
Sprinkle with more cheddar cheese and bake for about 20 minutes or until bubbly.
One 10 oz can of sauce is good for two small meals since it is just the two of us.
I froze the second half of the can.
You could add chicken or beef if desired.

Finally, here is a recipe for minestrone soup.


Brown winter veggies in a skillet. I used carrots, onions and Brussel sprouts.
Once tender, add about 2 cups of water and one beef bullion cube.
Stir in 1/2 jar of Prego Traditional Spaghetti sauce, 1 can of Delmonte Whole Green Beans (chopped) and 1 can of beans. We like pinto or Navy.
Whole green beans are better than any other kind.
 In a separate pot, boil your favorite type of pasta. Do not add this to the soup until it is served otherwise the pasta will get mushy.
This can be served with Italian sausage. My favorite is Johnsonville Italian Sausage in mild.
They make a sweet Italian but it's too sweet for us.


This was enough for two meals - freeze the pasta and soup separately.

Add some meat to this and you can have Groundhog Stew tonight!

  3. Haha - love it - groundhog stew! Love all your yummy meals. I'll keep in mind to use the white corn tortillas for enchiladas and your minestrone looks wonderful. I smiled when I saw the bag of pot-stickers. Ling-Ling was my Siamese cat's name. She was my little lovey. Have a nice weekend. xx Karen

  4. That’s too funny about “groundhog stew”! I didn’t even realize it wa Groundhog Day until I saw a news blip about the groundhog seeing his shadow (but of course!). All these foodie ideas of yours are making my hungry! I love potstickers but have only had them a few times. The beef noodle bowl looks delicious!

    Groundhog Stew? Doesn't sound appetizing... sounds like eating a groundhog. However, your other menu suggestions look yummy.
