Ten On The 10th/The Best BBQ Side Dish

Hi and welcome to Ten on the 10th. It is where 10 bloggers get together and all share something for under ten dollars.
Our theme this month is BBQ. 
I want to give Terrie from Decorate & More with Tip a big thank you for being our host this month. 
One of my favorite meals is barbecue chicken with potato salad and corn on the cob.

My mother in law has one of the best potato salad recipes.
(My sister in law also makes amazing potato salad in case she is reading this.)

My MIL's is classic Southern Potato Salad with egg and not a lot of mustard.

I thought I'd share it with you.
This recipe can be adjusted to feed more people.

Jane's Potato Salad 

3 potatoes
3 hard boiled eggs
4 large sweet gherkin pickles 
1/4 tsp. of yellow mustard 
3/4 cup of mayonnaise and Miracle Whip mixed 
Salt and pepper to taste 

Peel and boil the potatoes until soft but not mushy when pricked with a fork.
Set the eggs on the stove to hard boil. Let cool and peel.

I like them kind of chunky.

Slice the gherkins chunky too.

Add the mustard.

Stir in the mayonnaise and Miracle Whip mixture. Adjust as necessary.
Not every potato absorbs mayo the same. 
Mix together well and let cool in the refrigerator.

We didn't have any corn so I made a green salad instead.
I like my chicken with BBQ sauce. Bill likes his with seasoning.
Did you know that cold potatoes are better for you blood sugar than warm potatoes.
Helpful to know for the diabetics out there.

Potato Salad is such an affordable side dish.
Potatoes - $2.00
Gherkins - less than a dollar
Eggs 30 cents
Miracle Whip/Mayo Mixture - $1.00

I don't love peeling potatoes so at times I'll bake the potatoes in the microwave.
 This also cuts down on prep time.

I've loved using the red and white dishes this summer. The table is set for a fun BBQ dinner for two.
It was delicious.

  7. I love Potato Salad and my recipe is similar, but I am saving this one to try next!! Did you know you could avoid the grey ring around the yolk when boiling eggs? I wrote a post about it a while back ( Thanks for sharing!

  8. This has pretty much been my recipe also for the past 50 years, except I use less pickles. I've also used this recipe many times using leftover mashed potatoes. I'm not a vinegar lover, so the mustard/mayo dressing suits me just fine and I like the ample mixture of eggs with the potatoes. Such a great recipe for any time of the year.

  9. Potato salad is a favorite of mine. I tend not to use mayo in case it's setting out too much but add a little mustard to the dressing. Love eggs in potato salad!
