Granny's Pecan Cookies

I didn't know what they were called at the time but anything rolled in powdered sugar has got to be good.
Am I right?
I asked my grandmother for the recipe but she was "a little of this and a little of that" type of baker.
She was a fabulous baker.
Her cooking always needed a bit more salt.
If I were honest with myself, the same holds true for my cooking.

I have some of her recipe books.
There is one from the electric company.
Can you imagine the electric company sending a cookbook now days?

The cookies I'm about to share have many different names.
Pecan Sandies
Mexican Wedding Cookies
Russian Tea Cakes
Snowballs
What ever the name, they are delicious.
They are some of my favorite cookies for the holidays.
They have a rich buttery taste and the powdered sugar is finger licking worthy.

The recipe I use comes from my old Betty Crocker Cookbook.
We got this cookbook for our wedding and it has been through a lot.

Russian Teacakes

1 cup butter softened
1/2 cup powdered sugar
1 teaspoon vanilla
2 1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup finely chopped pecans (you may alter the type of nut if you prefer)
Powdered Sugar

Heat oven to 400 degrees.
Mix butter, 1/2 cup powdered sugar and the vanilla. Mix in the fours, salt and nuts until dough holds together.
Shape dough into 1-inch balls. Place about 1 inch apart on un greased cookie sheet. Bake until set but not brown. 10 - 12 minutes.

Roll in powdered sugar while they are warm and again once they are cool.
About 4 dozen cookies.
These keep well in the freezer.
Dust with powdered sugar before serving.

Thanks to Carol for putting this tour together.

  17. Love those cookies, but have never made them. They sound easy enough to make and nice that they can be frozen. Love the beautiful ways you have them displayed, especially that darling transfer pitcher and the metal picnic basket.
    Happy Thanksgiving.

  22. Katie,
A great recipe that is being added to my files. I have an old Betty Crocker Cookbook that we received as a wedding present also. It was a life saver when we were stationed on Cyprus while in the Navy. I had to buy meat from a butcher two doors down from my house. He just laid a side of beef on his counter, and I had to point to the section that I wanted a cut from. My Betty Crocker Cookbook has diagrams for beef, pork, lamb, etc... cuts. That's how I knew where to point on the beef slab.
